A Baileys Belated Birthday

Well, here we are.  I am back at Wes for my final semester.  I am healthy, happy, and in love with my life.  It's going to be an amazing end to an amazing four years.

To start it off properly, some of us from the VWM crew got together to celebrate the birthdays of two of our own that happened during break.  The first birthday we missed was that of Tess.  When I think of Tess, I think of fun, happiness, and she'll hate me for this one- alcohol.  Nothing says those three things better than a Bailey's Chocolate Cheesecake.

Bailey's Chocolate Cheesecake
Recipe adapted from Gimme Some Oven.

Crust Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
3/4 stick unsalted butter (melted)
Whisk together dry ingredients in a large bowl
Pour in butter and stir together until dry ingredients are well-covered
Press into a 9" springform pan and bake at 350°F for 10 minutes.  Cool on a wire rack.
Cheesecake Ingredients:
3 8oz packages cream cheese (softened)
1 1/4 cups granulated sugar
1/4 cup unsweetened cocoa powder
3 Tbs all-purpose flour
3 eggs
1/2 cup sour cream
1/2 cup Bailey’s

Beat together cream cheese, sugar, cocoa powder, and flour just until smooth
Add eggs one at a time
Beat in Baileys and sour cream just until combined.  Pour onto crust.
Bake at 450°F for 10 minutes, then reduce temperature to 250°F and bake for 60 minutes.  The middle should still look slightly wet and jiggly.
Run a knife around the sides and cool on a wire rack for 15 minutes.  Then remove the sides.  Cool for another 30 minutes and then store in refrigerator until serving.
Chocolate Ganache:
4 oz high quality dark chocolate chips
1/2 cup heavy cream

Measure out 4 oz chocolate chips
Heat cream on medium heat until nearly boiling, then pour over chocolate chips in a bowl and let sit for 30 seconds
Stir together until smooth and glossy.  Pour over cheesecake immediately.
